PBW RS1 possesses a remarkable resistant starch content of 30.3%, significantly higher than the 7.5-10% found in other wheat varieties. This higher resistant starch content indicates that glucose is released more slowly, ensuring better control over blood sugar levels. Moreover, PBW RS1 exhibits an impressive amylose content of 56.63%, surpassing the 21-22% found in other wheat varieties. These characteristics make PBW RS1 a promising dietary option for individuals concerned about their glycemic response.

Farmers are accustomed to higher yields, making the adoption of PBW RS1 a careful consideration.
Additional Advantages for Food Processors
Beyond its nutritional attributes, PBW RS1 offers benefits to bakers and food processors. Products made from its flour, such as chapatis and biscuits, retain the taste and texture of those made from normal wheat. Moreover, the increased total dietary fiber resulting from the higher amylose and resistant starch content allows for the production of fiber-rich products without the need for additional additives.
